Pasta Primavera with Sausage Meat

Another Carenivor original recipe! This one's created for 1 person. It's got lots of vegetables, and an unusual ingredient: sausage meat (or you can use any mince meat, like this organic pork mince). Whatever you choose, remember to make sure it's sustainable!

  • 225g of fusilli pasta (or pasta of your choice)

  • ½ cup / 65g of mixed vegetables (frozen or fresh)

  • ½ cup / 65g of spinach

  • 225g of sausage meat

  • 120 ml of pasta water

  • 2 tablespoons of butter

  • ¼ cup / 32g of parmesan cheese

  • ¼ cup / 32g of mozzarella cheese

  • 2 tablespoons of butter

  • 3 tablespoons of soy sauce

  • 2 tablespoons of sugar or honey

  • ½ teaspoon of complete seasoning

  • ½ teaspoon of cajun spice

  • ½ teaspoon of chilli flakes

  • 8 cloves of chopped garlic

  • Handful of chopped parsley

  • In a pot of boiling water, add your pasta and allow it to cook.

  • Once cooked, drain your pasta and run under cold water to stop the cooking process. Make sure to set aside some of the pasta water for later.

  • In a heated pan, add your oil or butter and allow to heat. Then add garlic, sausage meat, mixed vegetables and spinach. Stir.

  • Add your soy sauce, sugar and pasta water and stir evenly.

  • Add pasta and seasoning. Mix well.

  • Add your cheeses, mix evenly.

  • Sprinkle your chopped parsley.

  • Enjoy!
